Strawberry and elderflower cordial

Ingredients

1 litre strawberries
10 elderflower heads
1 untreated lemon, sliced
15 g citric acid
1 litre water
1 kg Dansukker Granulated Sugar
2 g sodium benzoate (omit if cordial is to be stored in the freezer)

Instructions

Rinse the elderflowers and strawberries thoroughly. Mash the strawberries. Combine strawberries, elderflowers, lemon slices and citric acid in a bowl. Bring the water and sugar to the boil. Dissolve the sodium benzoate in a little of the warm syrup and pour back into the pan. Pour the hot syrup over the mixture in the bowl. Cover and stand in a cool place for three days. Strain through a cheesecloth for 30 minutes. Pour into sterilised bottles, filling them right to the top. Seal. Store in a cool place. The cordial can be stored in the freezer.
